Dairy Free Scones.
Yes, it is possible to have light, dairy free scones. This is my “go to” recipe which has evolved over the years.
Ingredients
320ml Oat Milk or Nut Milk
500g Self Raising Flour
80g Margarine or Non Dairy Spread
10g Baking Powder
Pinch of Salt
Method
Preheat the oven to 200C
Line a tray with baking parchment
Into a large mixing bowl sift the flour, baking powder and salt (this is one time when the flour needs to be sifted).
Add the margarine in small pieces, then rub in with the tips of your fingers. When it resembles bread crumbs add the liquid slowly mixing with a large tablespoon.
When combined into a ball which is not dry turn onto a floured board. roll out to 2cm thick disc. Using a 5cm cutter, cut out the scones and place on the lined trays. Do not have the scones touching, Brush with milk.
Bake in the oven for 10-12 minutes until the scones are golden brown. Cool on a cooling rack.
Serve warm or cold perhaps with some lemon curd or jam.
