A little something with a cuppa

The Sunday before Christmas and it is time for some biscuits. Biscuits in Ireland would be similar to those which are called cookies in the U.S.A.


There will be plenty of rich food over the Christmas period so something light to go with a cuppa is called for. What is also called for is my recipe album.


I have a blue covered photo album filled with recipes I have collected over the decades. something simple but which has alternatives is called for.


My simple Biscuit


4oz margarine

2 oz sugar, brown, castor or granulated

1 level teaspoon of honey or golden syrup or maple syrup

2 oz sultanas, cherries, mixed peel

4 oz plain flour


Preheat the oven to  180C

Grease a baking sheet or line the baking sheet with parchment paper.

Beat the margarine and sugar together until it changes colour.

Mix in the honey and cherries.

Sift the Flour and beat into the mixture.

Place teaspoons of the mixture  onto the baking sheets leaving space between them.

Bake in the centre shelf of the oven for 20-25 minutes.

Cool on a wire tray.

Store in an airtight container.

Lovely with a cuppa.
