Potato
I was looking for a recipe in order to use up some mashed potatoes. I had meatballs ready for cooking on the hob and finishing in the oven. I decided that potato cakes just wouldn’t go with them so needed something else.
I had a vague memory of mashed potatoes an egg and seaqasoning then baked in the oven. Now I know many would google the ingredients and find a recipe. However , I am still old school and it is Delia Smith Complete Cookery Course, Grub on a Grant by Cas Clarke or All About Home Economics by Deirdre Madden.
Yes, Yes Yes Deirdre Maddens book came up trumps. Duchesse Potatoes. They are cooked in the oven at the same temperature as the meat balls. Win Win.
Now I did have to make just a little tweek!!!!
Duchesse Potatoes
Ingredients
250g mashed potatoes
1 small /medium egg
Ground white pepper
1/4 teaspoon nigella seeds (optional.)
Method
Line an oven tray with parchemet paper
Beat the egg.
Add the pepper and nigella seeds to the potatoes and mix well.
Now mix in the egg and beat the mixture well. I found a hand held beater good at this point.
Spoon table spoons onto parchement paper
Leave in the fridge for 30 minutes.
Preheat the oven to 200C
Bake in the oven until the potatoes are crisp and beginning to brown in the edges. Somewhere between 15 and 25 minutes.
Note
It is important that no milk has been added to the mashed potaotes.
These potatoes are lovely with just salt and pepper.
They would also look very retro pipped before baking.
