Savoury potato cakes

 

Ingredients

250g / 8oz / 1.5 cups cold mashed potatoes

50g / 1.5 oz/ 1/4 cup plain or all purpose flour,

(if using rice flour 150g/ 5oz/ 3/4 cup)

1/4 teaspoon salt

1/4 teaspoon baking powder

2 teaspoons melted margarine

handful chopped parsely

1 small onion finely chopped cooked and cooled

Method

In a large bowl break up the mashed potato slightly. Add sifted flou, baking powder and salt.

Now add whatever flavours you like or add parsly and onion..

Add melted margarine and combine all the ingredients together.

Knead the mixture in the bowl before turning out onto a lightly floured board.

GENTLY roll out to about 1cm/ half an inch thick.

Cut into squares or triangles.

These can be fried in hot oil until brown.

They can be browned on a dry pan until browned.

They can be baked for 10/12 minutes 200C/ 392F

Serve either hot or cold
