What to make for lunch? That old chestnut.?

A sandwich perhaps? Not the old cheese sandwich or even the ham sandwich.. How about changing the sandwich? I love a sandwich. Personally I prefer white pan bread but it really is a matter of choice. This is equally as nice with a wrap as with bread.

My favourite sandwich is on a Monday. A Monday sandwich is just so inviting. On Monday I use Saturday’s bread. Two slices toasted underneath the grill but I only toast one side of the bread. While the bread is cooling I gather together the “makings”.

Cold roast potatoes left over from Sunday lunch. If its chicken then its the pickings from the bones which wil also have that succulent stuffing. Now for a little crunch I slice some iceberg lettuce then grate a carrot or two.

As I don’t eat mayonaise I spread some cashew butter on the non toasted sides of the bread. Next layer is lettuce on both slices of bread then grated carrot, sliced potatoes and finally chicken.

Now if you feel you can handle it put the two slices of bread together, cut in half and enjoy. I prefer to make it into an open sandich and to finish it off I would add frreshly grated pepper and chopped parsley.

This is my favourite sandwich and the easiest to put together. So perhaps the next time you are thingking of a sandwich don’t just grab the cheese add a few extras that perhaps have been left over and make your own fvourite sandwich.
